In my opinion, aqueducts and irrigation are the most essential of all humankind's technologies. We simply would not be able to support our modern societies without them. It wouldn't matter how many mp3's you could fit into a little portable box or how large your plasma screen was if the water stopped flowing into the city or the crops withered in the fields. However, despite the enormous importance of water for the wellbeing of our society, most people take it for granted as it flows out of the faucet, and they waste it and pollute it thoughtlessly. I can only hope that people start taking a greater interest in the one liquid that keeps them all alive.
